Julia is an intimate 22-seat restaurant in Villa Crespo, created by Chef Julio Martín Báez around a concept of his own: “Indie Cuisine.” Its philosophy celebrates creative independence and places ingredients at the center of the experience rather than concealing them behind excessive technique. Product, seasonality, and flavor provide the foundation for the restaurant's culinary language. The cuisine combines contemporary techniques with an intense focus on micro-seasonality, incorporating vegetables, herbs, seeds, fermentation, and Argentine ingredients into dishes characterized by vibrant flavors, acidity, and occasional heat. Julia also approaches gastronomy holistically, considering producers, ingredients, its team, working conditions, creativity, and hospitality as interconnected parts of the same experience.
