Whiskey Rose began as a string of conversations over beers in a garage in 2020 and, since opening in 2021, has asserted itself on Calgary’s 17th Avenue as a two-storey Beltline saloon with south and west-facing patios. The kitchen leans into Southwestern and Country flavors, serving big plates and shareables such as St. Louis ribs, birria and shrimp tacos, a Nashville hot chicken sandwich, double-baked mac and cheese, and forno oven pizzas alongside burgers and pork-belly ‘burnt ends’. A bar program that includes crafted cocktails and a handpicked whiskey showcase underpins weekends of live music and dancing. The venue’s aesthetic references road-worn country motifs translated through an energetic urban barroom where conviviality and communal dining set the tone for the evening.
