The dry‑aged steak program includes Delmonico, Kansas City strip, Long Island and a 30oz Tomahawk, alongside Australian Wagyu and wet‑aged filet. Seafood selections move from Maine lobster bisque and lobster “cargot” to miso‑marinated Chilean seabass and Glory Bay king salmon. Small plates balance contrasts — Kona‑coffee glazed bacon with devilled eggs, roasted marrow bones, spicy bigeye tuna with crispy rice and Vietnamese summer rolls.
