Sushi by Scratch: Miami

Part of a Michelin-recognized concept, Sushi by Scratch: Miami is led by Chefs and owners Phillip Frankland Lee and Margarita Kallas-Lee and places an omakase-inspired tasting sequence at the centerof a convivial counter setting in Coconut Grove. The 17-course menu comprises sixteen pieces of nigiri and one dessert bite, each delivered with precise technique and occasional, telling twists such as a dab of sweet corn “pudding” or sourdough breadcrumbs on hamachi, and the depth of a house-fermented soy. A compact counter keeps the service tightly choreographed, while a beverage program that ranges from cocktails and sake to beer and Japanese whisky flights is calibrated to complement the unexpected pairings and encourage lively conversation.
