Founded by chef Fernando Rivarola and sommelier Gabriela Lafuente, the restaurant is dedicated to showcasing Argentina's biodiversity through contemporary native cuisine. Its menus highlight ingredients sourced directly from small producers, fishermen, foragers, and local communities across the country's diverse eco-regions. After more than a decade in Buenos Aires, El Baqueano relocated its flagship restaurant to Salta to work even closer with producers from northwestern Argentina.
