Humo Negro is chef Jaime Torregrosa's "fine-dining grunge" izakaya in Bogotá's Chapinero district, where Colombian biodiversity meets Japanese technique and a Nordic sensibility honed at Fäviken and Ca Sento. The menu runs as shareable small plates or a full omakase, with 80–90% of ingredients sourced in Colombia: grilled oysters with burnt cream, blue-crab ceviche, and the signature responsibly-sourced Amazonian pirarucú belly with camu camu. Black walls, low warm light, an open grill and an all-black-clad team make the room as intentional as the cooking. Ranked No. 41 on Latin America's 50 Best Restaurants 2025.
