  • Ingredients:
    • For the dough:
    • 350 g semolina
    • 150 g flour
    • 4 egg yolks
    • 2 whole eggs
    • a splash of oil
  • Sauce:
    • 0.2 l cooking cream
    • 0.05 l wine
    • fresh bottarga
    • grated dried bottarga
    • 0.2 l fish broth
  • Broth:
    • Heads and bones of sea bass
    • root vegetables
    • olive oil
  • Preparation:
    • Knead the dough with all the ingredients, letting it rest for 1 to 2 hours
    • Fillet the sea bass, using part of it to create seasoned cubes
    • Cook the broth with the sea bass bones and head
    • Roll out the dough, fill it with the mixture, and shape the tortellini
    • Sauté cleaned bottarga in oil, deglaze with wine, broth, and cream
    • Cook tortellini in the broth, combine with the sauce, and grate dried bottarga on top
