Huvudsta Trädgård

The summer is all about firing up the grill and getting your favourite foods charred to glistening perfection—and there's no better way to bring out the best in your creations than with this savory herb butter from Elin Aronsen Beis. As the founder of Huvudsta Trädgård, an experimental urban garden in Stockholm focusing on zero-waste practices with low to no negative environmental impact, she works with an abundance of herbs during the warmer months and breaks out this easy-yet-delectable recipe to elevate meats, fish, and veggies. It's the perfect choice when entertaining friends and family on evenings outside around the barbecue.

On top of using a verdant blend of fresh parsley and chives with vinegar-soaked tarragon leaves, what makes this savory herb butter special are the additions of secret ingredients like soy sauce, ketchup, and curry—plus the added punch it has from grated garlic, white wine vinegar, and Tabasco hot sauce. Once the butter is whisked and blended with all the ingredients, including salt and pepper, achieving an airy, fluffy consistency, you can spread it on greaseproof parchment paper in a thin layer and store it in your freezer airtight until you want to slice off a piece to use.

The best part about this recipe is that it's an inspiration for any kind of savory seasoned butter you want to make. You can substitute different herbs, additional spices, and other flavourful ingredients based on what's available in your pantry and to suit your palate's personal preferences. Next time you're thinking of inviting people over for a summer grill feast, consider going extra gourmet by making this sophisticated-yet-simple herb butter.
