Summertime Savory butter
INGREDIENTS:
500 g butter, room temperature
1 tbsp curry
1 ½ tbsp ketchup
1 tbsp tarragon leaves in vinegar, chopped
1 tbsp white wine vinegar
1 tbsp soy
½ pot parsley, finely chopped
½ pot of chives, finely chopped
1 clove of garlic, peeled
Teaspoon freshly ground black pepper
10 drops of tabasco
2 teaspoons salt
INSTRUCTIONS:
Finely grate the garlic clove. Whisk the butter with all the ingredients until it reaches a fluffy and airy consistency. Spread thinly onto sheets of greaseproof paper. Store in freezer. When you're ready to use it, just break it into pieces and put it on newly grilled meat, fish, or vegetables. Use within three months. Enjoy!
