Zaranda reinterprets Las Californias through wood-fired cooking and zarandeado – fish grilled in a wire basket – placing seafood such as lobster, octopus and sea urchin beside arroces, slow cooked lamb and Baja tacos. Wines span Napa to Valle de Guadalupe; cocktails are guided by Carlos Serrano.
