Chiho Bistro examines the evolving definition of Chinese‑American cuisine, tracing a lineage from early Chinese settlers to a present that values straightforward, warming food. The kitchen articulates its philosophy plainly—simply good food that warms the soul—through a focused roster of handmade soup dumplings, from classic kurobuta pork to squid‑ink wrappers with black truffle, mala‑spiced variants and plant‑based renditions. Complementary small plates include chive kurobuta potstickers and wontons finished in Szechuan chilli oil.
