WAKUDA

WAKUDA is the collaboration of two‑Michelin‑star chef Tetsuya Wakuda and John Kunkel, presenting contemporary Japanese cuisine that probes the tension between tradition and modernity. The kitchen moves between an omakase counter and a broader menu, delivering precise sushi and sashimi, A5 and Kagoshima wagyu, signature Canadian lobster preparations and yuba with Hokkaido uni, alongside tempura, robata grilling and noodle dishes. An intimate omakase room—an eight‑seat counter illuminated by an onyx bar—allows chefs to compose course after course in response to guests.
