The Establishment at Cornell University occupies the North Terrace on the ground floor of the Statler Hotel and operates as a classroom first and restaurant second, where students in the School of Hotel Administration run every element of service and kitchen. The menu is engineered to reinforce students' command of cooking methods and production equipment and combines an eclectic mix of dishes inspired by a range of cuisines. Each semester, student management teams conceive themes, pitch concepts and execute menus such as 'Taste Don't Touch', with dishes such as 'pop art beat carpaccio' and 'red velvet underground whoopie pies', alongside items such as duck pizza and a Mexican tart. The Establishment functions as a rigorous, hands-on laboratory for hospitality practice, emphasizing teamwork and applied management.
