In downtown Hamilton, Grano is an Italian restaurant whose name – taken from the Italian word for wheat – signals a marked attention to grain and dough. Chef-owner Brandon Dearden, for whom Grano is a second venture after his tenure at Ember, has fashioned a menu of pizza, pastas and classic plates such as Chicken Marsala and tiramisu, with Montana wheat placed at the heart of the kitchen’s thinking.
