Claud is a downtown bistro in New York’s East Village from partners Chase Sinzer and Joshua Pinsky. Inspired by European styles of dining, the kitchen applies careful technique to straightforward dishes while the wine program remains a central pillar. The room sits a few steps below street level, where whitewashed brick, dark charcoal tiled floors and snug seating create a quietly focused atmosphere. The team shops the Union Square Greenmarket several times a week and works with a small group of trusted vendors for proteins and produce, which informs the menu’s seasonal clarity.
