This José Andrés restaurant interprets Peru’s culinary heritage through Criollo, Chifa and Nikkei traditions. Menus range from ceviches and dim sum to ají de gallina, nigiri on causa and chaufa with fried banana; special dishes include Kam Lu Wantán, Suspiro Limeña and whole-roasted pollo a la brasa. The beverage list pairs pisco cocktails, Japanese spirits and South American wines.
