Sushi Bar by Moshi is the intimate eight-seat counter inside Grupo Carmen's Moshi in El Poblado, Medellín, where chef-owners Carmen Ángel and Rob Pevitts reinterpret Asian technique through a Colombian lens. Built like a Tokyo sushi bar with an open kitchen, it serves an omakase and à la carte menu of nigiri, maki, bao, and ramen made almost entirely from artisanally line-caught Pacific-coast fish and local produce — no imported or industrially sourced seafood, no cream cheese, no fried rolls. Under chef Daniela Osorno, the kitchen layers in house ferments, meads, kombuchas, and vinegars alongside flavors drawn from Japan, Vietnam, Malaysia, and Thailand. The room is warm and contemporary, with copper pendant lights over a bamboo-fronted counter where guests watch each piece being shaped to order.
