Selma is chef Álvaro Clavijo's second Bogotá restaurant, opened in late 2023 a few steps from his acclaimed El Chato in the Chapinero / Zona G neighborhood. Set in a restored early-twentieth-century house with soaring exposed-wood beams, abundant natural light and an open kitchen built around a cast-iron wood-fired grill, it reads as a contemporary Mediterranean bistro drawing on Spanish, Greek, Italian and North African cooking, executed entirely with Colombian produce. Head chef Esteban Olaya leads a menu of recognizable classics given a refined twist: smoked watermelon carpaccio with feta and figs, a phyllo cheese tart with grilled grapes, crab rice, and grilled meats and seafood such as pork chop with chicharrón and pepper steak with béarnaise espuma. A lively bar program of house ferments and guest-bartender cocktails gives the room its hedonistic, convivial energy.
