Sambombi Bistró Local is chef-owner Jhon Zárate's intimate, produce-led bistro in Medellín's Provenza neighborhood (El Poblado), where a weekly-changing menu is built around ingredients bought directly from small Colombian farmers. Zárate — who trained at Bolivia's Gustu and Copenhagen's Relæ and is also a sommelier — turns that biodiversity into dishes like roast chicken with shiitake, pillowy arepas crowned with crab slaw, and gnocchi made from cassava, paired with a low-intervention, Old World-leaning wine list. The long dining room is bright and airy, dressed in greenery and simple wooden tables with an open view into the kitchen.
