Set in a converted corner house in Bogotá's Chapinero Alto, Salvo Patria began in 2011 as Juan Manuel Ortiz's artisanal coffee project and grew into one of Colombia's most quietly influential restaurants under chef and co-owner Alejandro Gutiérrez Vélez, a Central (Lima) alumnus. The kitchen is rigorously seasonal and zero-waste, drawing on its own garden and traceable Colombian produce, with a menu that rewrites itself as nature changes. Signature plates lean into native ingredients — agnolotti with roasted corn and ant butter, buffalo with green pepper from Putumayo, and the house milhoja, a fixture for more than a decade. The mood is that of an unpretentious neighborhood bistro: warm, gathering-friendly, and anchored by craft cocktails and Colombian wines. A name on the Latin America's 50 Best Restaurants list.
