Leo is chef Leonor Espinosa's landmark restaurant in Bogotá's Chapinero district, the first Colombian restaurant ever to enter the World's 50 Best lists and ranked No. 23 on Latin America's 50 Best Restaurants 2025. Its "Ciclo-Bioma" tasting menu — offered in five, eight, or twelve courses — traces the country's ecosystems through little-known native ingredients such as the mojojoy palm worm, borojó, Amazonian pirarucú, and Arhuaco heirloom cocoa, all sourced exclusively from Colombian biodiversity. The dining room is dark, high-ceilinged, and unhurried, with contemporary art on the walls, while upstairs "La Sala de Laura," run by Espinosa's daughter and sommelier Laura Hernández Espinosa, pairs the food with Colombian fermentations, distillates, and cocktails from its own acclaimed bar. Espinosa, named the World's Best Female Chef in 2022, treats each plate as research and storytelling — cuisine as a window into the communities and terroir behind every ingredient.
