Don Diablo is Medellín's premier steakhouse, opened in El Poblado by Carmen Angel and Rob Pevitts, the team behind the acclaimed Carmen. Built around a singular idea — championing 100% Colombian beef instead of imported cuts — it houses what is said to be the country's only dedicated dry-aging cellar, where rib-eye, T-bone and porterhouse rest 15 to 60 days before being grilled over local firewood on a custom open-fire parrilla under chef Johny Patiño. Beyond the marbled steaks, the menu spans house-made charcuterie, fresh seafood and tartares, craft cocktails and a deep wine list, served in a warm, design-forward room marked by the restaurant's bronze trident-bull emblem and live flame. The result is upscale but unpretentious — equally suited to a celebration, a business dinner or a serious carnivore's pilgrimage.
