Domingo is chef Catalina Vélez's "nueva cocina de origen" in a restored colonial house in Cali's San Antonio district, where an open kitchen and long communal tables spill into a lush courtyard planted with more than 300 edible species. The tasting menus read as a map of southwestern Colombia — Valle del Cauca, Cauca, Chocó, Nariño and Putumayo — built almost entirely from small-producer ingredients and zero-waste technique: Tumaco shrimp in yacón leche de tigre, a crisp pandebono tile with chontaduro mousse, duck arroz atollado, and desserts of borojó and Tumaco chocolate. Vélez, who earned a "knife" at The Best Chef Awards 2024 and a La Liste Community Spirit Award, treats the meal as a living argument for Colombian biodiversity and fair trade with farming and coastal communities. On Sundays the room turns into a "mesa larga," a long-table popular feast of regional dishes like lechona.
