Jacobo Bonilla

Named after the Colombian painter Débora Arango, this Chapinero Alto dining room channels her artistic boldness into chef Jacobo Bonilla's hyper-seasonal, produce-led Colombian cooking — vivid, technically precise plates built on native herbs, flowers and root vegetables sourced from small producers. The signature "Bogotá" tasting menu is a seven-course journey through the city's emblematic neighborhoods, from a 20 de Julio stuffed potato with stewed meat and tamarind to Chapinero's hen with toasted corn and caper sauce and Restrepo's trout in gooseberry-garlic sauce. Sommelier Valentino Galán, formerly of Lima's Central, Kjolle and Mil, builds the pairings, with cocktails and non-alcoholic infusions drawn from local ingredients. The industrial-modern space of iron, wood and microcement frames a personal, detail-driven experience that earned Débora a place on Latin America's 50 Best Restaurants within two years of opening.
