Set in a restored house in Medellín's El Poblado, Carmen is the flagship of chef-owners Carmen Ángel and Rob Pevitts, the California Culinary Academy-trained couple who opened it in 2008 and helped ignite the city's fine-dining scene. The kitchen, now led by executive chef Juan José Cárdenas, builds contemporary, ingredient-driven menus around Colombia's vast biodiversity—think Caribbean blue crab with soursop, Pacific-coast fish over coconut rice, and a celebrated seafood-and-crab rice stew, with desserts and an indigenous-distillate cocktail program rounding out the experience. Guests choose between a seven-course tasting menu and an à la carte selection across three distinct spaces: a wood-lined bar, a glass conservatory, and a leafy courtyard.
