Carmen is the Cartagena outpost of Grupo Carmen, the influential restaurant group founded by chef-owners Carmen Ángel and Rob Pevitts, Le Cordon Bleu graduates who helped redefine modern Colombian cuisine. Set inside a restored colonial home in the walled Old City, the room opens onto a tree-filled, fairy-lit courtyard, with terracotta leather chairs and patterned encaustic tile floors. The kitchen builds ingredient-driven, Caribbean-leaning tasting menus from Colombia's biodiversity, leaning on Rosario Islands lobster, artisanal-caught Caribbean fish, and Amazonian produce, framed by a tropical craft-cocktail program. Expect theatrical seafood courses such as smoked-shellfish presentations alongside refined desserts on hand-glazed ceramics.
