The sommelier Marcos Granda, with five Michelin stars to his name, offers Japanese haute cuisine in his second restaurant in Madrid (the first is Clos). TOKI is an intimate space for just six diners, where chef Tadayoshi Teddy Motoa explores the evolution of Japanese from past to present. It was awarded a Michelin star in the 2024 edition of the prestigious guide. The modest, elegant restaurant, just 55 m2 in size and decorated by Alejandra Pombo, has a single sushi bar around which diners are seated. TOKI's tasting menu use the best raw ingredients and excellent rice. Tadayoshi prepares the dishes in front of the diners and time is one of the fundamental ingredients, as all the preparations are carried out with the necessary sense of calm. The chef uses three different recipes and marinades to enhance the intensity of flavour in the rice and there is also a wide variety of sake to choose from.
