Thibault Sombardier, 36, is a chef of his time who combines a cuisine of high gastronomy with a more relaxed cuisine and environment. Since his childhood, he has been attracted to the product and its origin. Taken by passion, he trained in the kitchens of Marc Meneau and Bernard Constantin and then flew to Paris in the kitchens of Alain Dutournier and Yannick Alleno. Since 2012, he was the chef of the Parisian restaurant "Antoine" and was rewarded with a Michelin Guide star. In 2014, he participated in the show Top Chef in which he reached the final. At the same time, he decided to open several bistros, first the Mensae and then the Sellae, to offer a bistronomic cuisine with no complexes.
