Chef Paulo Shin
has a degree in gastronomy passed by the renowned D.O.M., Badebec, Le Coq Hardy, Kinoshita and KAA. In New York he gained experience in kitchens like Le Marais. Back in Brazil, Shin decided to put all his learning into a project of his own, embracing his origins and uniting his knowledge of classic French cuisine and Korean cuisine. Recent achievements include winning the Chef of the Year Award for Veja COMER & BEBER 2018/2019 and the Bib Gourmand Award from the Michelin Guide 2019.
Komah Restaurant
Komah offers a warm and casual experience. Inspired by the dishes prepared by his mother and grandmother during his childhood, Shin added his own touch by bringing his technical knowledge acquired in the gastronomy course and the restaurants where he passed. The result is a very authoritative menu with the classic flavors of Korean cuisine and a contemporary twist.
