Grayson Schmitz oversees the conceptual team at Olivier Cheng Catering & Events as a recipe developer. Previously, she was the Executive Chef of BKLYN Larder in New York City, a specialty grocer that focuses on sustainable produce and meats from local farms. A native of Wisconsin, she graduated from The Culinary Institute of America in 2004. She has traveled extensively in Europe, an experience that gives her food an authentic and pure profile.
Ms. Schmitz has cooked in some of America's most prestigious kitchens for over 15 years, including Jean Georges, Fiamma (under Fabio Trabocchi), and Wallsé. Shortly after she entered the Bravo Networks world famous Top Chef competition season 9. She returned in 2015 to compete again in season 13. Grayson is a leader in the New York culinary scene and always seeking out inspiration.
