Marco Baudone is one of Sweden's most renowned chefs and at his current restaurant, MAMA, he leans heavily into his Italian ancestry. At Mama, the rotisserie is at the heart of the kitchen and the focus is on farm raised chicken, pork side and prime rib. The traditional cooking art of rotisserie brings out the very best from the raw materials and the roasted meat is served together with various types of bread, such as levain, brioche buns and wheat tortilla. One could say that Chef Marco Baudone has one leg in New York, and one leg in east London. However, there is an unmistakable European flavor at Mama, and a mix of different kitchens that truly reflects both his family heritage and his professional influences. Marco has previously worked at Le Rouge, Operakällaren, F12 and Riche in Stockholm, as well as at Michelin star awarded Gualtiero Marchesi (Milan) and Restaurant Guy Savoy (Paris). Marco is also the author of the award-winning Brasserie Le Rouge Cookbook.
